Black Bean Sweet Potato Burgers
These Gluten Free, Vegan burgers will please even the meat lovers of your family! With only 10 ingredients, and 10 minutes to prep they are an easy dinner solution any night of the week!
I made these for my sister in law for an early birthday dinner. She is a vegetarian and I wanted to surprise her with a homemade birthday dinner when she came up to visit. We served the burgers with a green salad and a spaghetti squash bake (recipe coming soon!)

- 1 cup cooked mashed sweet potato (about 1 large sweet potato)
- 1 15 oz can black beans, drained and rinsed
- 1 tablespoon ground flaxseed meal+3 tablespoons water (or 1 egg)
- 1/2 cup GF oat flour (grind in blender)
- 2 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- A few clicks of fresh ground pepper
- 1/4 teaspoon salt
- 1 avocado sliced
Using your blender or food processor pulse the oats into a coarse flour. In a small bowl combine flaxseed and water until thickens for your flax egg. If you are not vegan you can add the egg to the mixture later on just breaking up the yolk as you mix it in.
Add olive oil to coat pan/skillet and heat to medium on stovetop. Next in a separate bowl combine the black beans and mashed sweet potato. Using a fork begin to mash the beans (leaving some slightly intact). Add the oat flour and egg along with remaining ingredients until combined. Using your hands shape into 6 patties.
Add the patties to your pan (may have to do in batches depending on size) and cook 5 minutes, flip, and cook an additional 5-6 minutes on the other side. The burgers will have a crispy outer finish with a soft inside.
Top with sliced avocado, place on a bun if you'd like, and serve with whatever veggie sides you have in mind! We served ours bun-less with a spaghetti squash bake and green salad.
